
The shaping of my career . . .
If I had to be asked what most shaped my career it might
have to be my wife and her family. I have been together with my wife for almost
14 years and her constant support has been an inspiration and spending time on
the family farm in France has taught me the importance of ingredients and how
to appreciate how it comes to the table.
My wife's grandmother is a battleship of a woman, strong and weathered
with age, fiercely protective of her family and formidable force to reckon
with, yet she has such a natural way with food. She takes everything she needs from the farm, eggs from the
hen house, a rabbit for the pot, some carrots fresh with soil from the garden,
and several peaches still warm from off the tree and she produces the kind of
comfort food only a lifetime of experience can provide. Her father taught me to
put love into the garden and into your work and it gives you beautiful things
in return, just like a family.
