Working as a head chef on the M/Y Paraffin for many years
provided its own special set of challenges and rewards. You are constantly cruising in some of
the greatest places on earth and always in search of the rarest and freshest
ingredients to work with. This
provided one of the greatest opportunities for a chef to expand his knowledge
and stretch the imagination to create new and hopefully great food. Given the Paraffin serves some of the
wealthiest people almost anywhere on earth, you are always pushed to your
mental and physical limits and you need to be great at what you do just to
survive. You never know what you
are going to be asked to create and that requires planning on being able to
create just about anything. The
demands are monumental and sleep is certainly optional. No matter what the show must go on.
